Food Heals and vital to sustaining mental health and I am Italian, we love our food. Healthy eating for me has become a way of life. Cooking, I enjoy from time to time unless I am super tired. Weekly I am thinking of positing out interesting recipes. This week, I am going to be doing one that I have made for last 6 years.
Coconut Curry Chicken or Shrimp or Vegetables, its simple tasty and great in for the middle of winter.
If you putting meat in the meals, I always soak it in lime juice, curry power, ginger powder, pepper and salt. Lime juice not only give the chicken or shrimp great taste, but cuts down cooking time too. The rest provides the great flavor, if you are using vegetables or tofu you can do the same.
Next cut up garlic, onions and raw ginger and coconut oil and light sautee it, for about 5 minutes. Add the meat/vegetables and let them cook on high heat for about 10 minutes. Once, it has been on high heat, lower the heat add coconut milk fresh cilantro (Coriander) and organic OJ or Apple juice. Add additional curry powder and juice as need, the juice will lighten the taste of curry to make it more mild which ideal for this recipe. Add turmeric and cumin power and let it cook on low heat for another 30-45 min. You can make rice or quinoa to go with it or a great salad.
